Several years ago, I developed health issues related to an autoimmune reactivity. Food would trigger all of my symptoms but I didn’t know it at the time. In addition to working with various doctors to treat the health issues, I had to revamp the way I eat, following a strict autoimmune protocol and going gluten-free.
It was tough. I craved desserts that tasted good, had a pleasing texture, and was still good for me! My family eats to celebrate everything. At family gatherings, everyone was enjoying food that I couldn’t eat. I felt left-out of the celebrations. For my birthday, I had to buy a cake from a gluten-free bakery that cost $50 and the sad part was it didn’t taste good. My family didn’t want to eat it because they didn’t like it.
When we celebrate moments in our lives, we should feel included and bring exciting food into the mix to do that. Gluten-free and healthy doesn’t have to mean cardboard flavors that no one wants to eat.
Creating delicious gluten-free, paleo, healthy gourmet baked goods and enjoying life, once cookie at a time is the mantra at The Blue House Bakery, established in 2020. We started our endeavor with delicious gluten-free Chocolate Chip Cookies (my favorite!), Apple Hand Pies, and Lemon Crinkle Cut Cookies, and will gradually move into almond butter strawberry bars, banana bread cookies, fudge brownies, banana chocolate chip cookies, more desserts, breads, and even bagels!
